When I visit my mom, as much as I love preparing her meals, I don’t want it to be too time consuming. Years ago, I remember my mom telling me she was having a tomato sandwich. I could tell she was really enjoying this.
A few years later I had the opportunity to make a tomato sandwich for the first time, when someone at work brought in tomatoes from their garden in addition to bread, mayo and a toaster. When I walked in to the break room my coworkers were looking at the ingredients and were hesitant to do anything. Me, being hungry for a challenge, decided to make a tomato sandwich. It was very good!
Not to compete with her beloved sandwich, I decided to make BLTs for lunch. During the summer when tomatoes are at their peak, a Bacon, Lettuce and Tomato sandwich is the way to go. Although this is an easy sandwich to make, the hardest part was keeping the bacon out of her reach. Let’s be clear, the smell of bacon cooking draws everyone to the kitchen for a peek.
It’s amazing how something so easy to prepare with ingredients you probably have in your refrigerator can be scrumptious, the word my mom says when she enjoys her food.
Fry bacon in skillet on medium high heat until done. Remove to paper lined pan to absorb oil. Spread equal amounts of mayonnaise on each slice of toast. Add lettuce each slice of toast. Place 2 slices of tomato each on 2 slices of toast, then 3-4 half slices of bacon. Top each with remaining pieces of toast. Slice in half and enjoy.
